Eve's CAvE Salad: Cucumber, Avocado & Edamame Salad

              Ingredients:
- 4 Persian cucumbers, sliced
 - 1 avocado, cubed
 - 1 cup edamame, shelled
 - 1 tomato, chopped
 - ¼ cup fresh-squeezed lemon juice
 - ¼ cup extra virgin olive oil
 - Salt and pepper to taste
 - A few sprigs of cilantro or parsley, chopped (optional)
 
Instructions:
- Gently mix cucumbers, avocado, edamame, and tomatoes in a bowl.
 - In a separate cup, whisk lemon juice and olive oil together.
 - Add salt and pepper to taste.
 - Pour the lemon juice and olive oil mixture over the salad.
 - Sprinkle with cilantro or parsley if desired.
