Breakfast Burrito Recipe

              Ingredients:
- 4 tbsp olive oil, divided
 - 1 cup onion
 - 1 red bell pepper, diced
 - 1 can low-sodium black beans, drained and rinsed
 - 4 whole eggs
 - 4 egg whites
 - ¼ cup shredded cheddar cheese
 - 4 whole wheat tortillas (6-8 inches wide)
 - ⅓ cup fat-free plain Greek yogurt
 - ¼ cup mild salsa
 - 1 avocado, diced
 
Instructions:
- Heat 2 tbsp olive oil in a large nonstick frying pan over medium heat.
 - Add onions and peppers and sauté until onions are soft and peppers are lightly charred, about 7-8 minutes.
 - Add black beans and cook until warmed, about 3 minutes.
 - Season with salt and pepper and transfer to a plate.
 - In a mixing bowl, whisk the whole eggs and egg whites and add cheese.
 - Heat the remaining 2 tbsp olive oil in the pan over medium-low heat and add egg mixture, scrambling until cooked through, about 3 minutes.
 - In a small bowl, mix Greek yogurt and salsa. Divide yogurt mixture evenly between tortillas and layer with black beans, veggies, eggs and avocado.
 - Roll up burrito style and serve.
