Easy Lentil Soup Recipe

              Ingredients:
- 2 tbsp olive oil
 - 1 onion, diced
 - 2 carrots, peeled and diced
 - ¾ cup green or brown lentils
 - 4 cups low-sodium vegetable broth
 - ¼ tsp thyme
 - 1 bay leaf
 
Instructions:
- Heat a large saucepan over medium heat. Sauté onion and carrot until onion is translucent, about 5 minutes.
 - Add remaining ingredients and bring soup to a boil. Lower heat and simmer for about 30 minutes, until lentils are soft. Remove bay leaf and serve.
