Turkey Chili

Cook time: 45 minutes
Servings: 6 - 8
Ingredients:
- 2 Tbsp olive oil or avocado oil
- 1 large yellow onion, diced
- 2 red bell peppers, diced
- 6 garlic cloves, minced
- 3 lb lean ground turkey or chicken
- 1 can red kidney beans (15 oz)
- 1 can black beans (15 oz)
- 1 can white beans or three-bean blend (15 oz)
- 1 can tomato sauce (15 oz)
- 1 can diced tomatoes (15 oz)
- 1 can green chiles (4 oz)
- 2 tsp cumin
- 1 Tbsp chili powder
- 1 Tbsp paprika
- 2 cups chicken broth
- 1 tsp salt
- 1 can sweet corn
Optional:
- 1 jalapeño, seeded and diced
Instructions:
- Heat oil in a large skillet over medium-high heat. Add diced onion, garlic, and red peppers and sauté for 5 minutes.
- Add ground turkey and break up the meat. Cook until brown, then add chili powder, paprika, and cumin. Mix in the seasoning for 20 seconds.
- Open, rinse, and strain all cans of beans and corn.
- Pour in tomatoes, tomato sauce, chicken broth, strained beans, and strained corn. Bring to a boil, then reduce heat and simmer for 30–45 minutes. When the chili thickens, remove from heat.
- Serve in bowls and garnish with toppings such as cheese, avocado, tortilla chips, cilantro, or sour cream.
