Seed Brittle

Ingredients:
- 1 cup raw pumpkin seeds
- ¾ cup raw sunflower seeds
- 2 tablespoons sesame seeds
- 2 tablespoons chia seeds
- 2 teaspoons ground cinnamon
- 1 teaspoon ground ginger
- ½ teaspoon pumpkin spice or ground allspice
- ½ teaspoon salt
- 1/3 cup maple syrup
- 1 teaspoon vanilla extract
Instructions:
- Preheat oven to 325°F. Line a baking sheet with parchment paper.
- Combine all seeds, spices, and salt in a large bowl, then add maple syrup and vanilla. Mix until well coated.
- Spoon the mixture onto the baking sheet with a rubber spatula. Pat the brittle into an evenly layered 1/8-inch-thick layer.
- Bake for 35 minutes or until golden brown. If it is not crispy after it cools, put it back in the oven for another 5–10 minutes.
