Roasted Spaghetti Squash Seeds

Ingredients:

  • ½ cup spaghetti squash seeds (or pumpkin seeds)
  • ½ teaspoon olive or avocado oil
  • 1 teaspoon maple syrup
  • ½ teaspoon ground cumin
  • ½ teaspoon ground cinnamon
  • 1/8 teaspoon kosher salt

Instructions:

  1. Clean and dry seeds thoroughly.
  2. Preheat oven to 300°F.
  3. In a bowl, toss seeds with oil, maple syrup, cumin, cinnamon, and salt.
  4. Spread on parchment-lined baking sheet.
  5. Bake for 15 minutes, stir, then continue baking another 10–15 minutes until golden and crispy.
