Lentil-Walnut Taco Filling

              Ingredients:
- 2 teaspoons olive oil
 - ½ medium yellow onion, diced
 - 2 large cloves garlic, minced
 - 1 ½ cups cooked green lentils (or 1 (15 oz) can, drained)
 - 1 cup raw walnuts, finely chopped
 - 1 teaspoon cumin powder
 - ½ teaspoon paprika
 - ½ teaspoon oregano
 - ¼ teaspoon chili powder
 - 2 tablespoons tomato paste
 - ¼ cup vegetable broth
 - 1 ½ tablespoons tamari or soy sauce
 - ¼ cup chopped fresh cilantro for garnish (optional)
 - Salt and freshly ground black pepper to taste
 
Instructions:
- Heat the oil in a large skillet over medium-high heat. Cook the onion and garlic for about 3 minutes, or until fragrant.
 - Add the lentils and walnuts and cook for 1 minute more.
 - Add the spices and tomato paste and cook for 2 minutes, stirring constantly.
 - Add tamari and vegetable broth. Reduce the heat to low and cook for about 4 minutes, or until the mixture thickens, adding more broth as desired.
 - Season with salt and pepper. Garnish with chopped cilantro, if using.
