Jujube Ginger Tea

Servings: 4
Ingredients:
- 4 oz dried jujubes
- 1 oz peeled and sliced ginger
- 6 cups water
- 1 tsp cinnamon powder
Instructions:
- Rinse dried jujubes in cold running water to remove any dirt. Optional: Soak jujubes in water for 20 min so they’re easier to cut.
- Cut jujubes in half (be careful of seeds) with kitchen scissors or a knife.
- Peel ginger and slice into thin pieces.
- In a medium pot, add ginger, cinnamon, jujubes, and water. Cover and heat over medium-low heat for 30 minutes. Leave the lid slightly open so the water doesn’t overflow.
- Reduce heat to low and simmer for 60 min. Remove from heat.
- Pour the mixture through a stainless steel strainer into a large heat-resistant bowl or pot. Mash the jujubes with a ladle or wooden spoon. The pulp should be strained through the strainer.
- Pour strained tea into a tea kettle or into cups to serve. Enjoy!
