Easy Vegetable Brown Fried Rice

              Ingredients:
- 1 Tbs sesame oil
 
- ½ cup red onion, diced
 
- 1 tsp garlic, minced
 
- ½ cup frozen peas
 
- ½ cup diced carrots
 
- ½ block extra firm tofu, crumbled (1/2 package)
 
- 2 ½ cups cooked brown rice
 
- 2 Tbs soy sauce
 
Instructions:
- Cook brown rice according to package instructions
 
- Heat a large pan over medium-high heat. Add sesame oil and saute onions, garlic, peas, carrots, and crumbled tofu until onions are tender and translucent
 
- Add cooked brown rice and soy sauce, then cook for 5-8 minutes while stirring.
 
- Remove from heat and serve
