Garlic Sesame Soba Noodles

              Ingredients:
- 1 (8 ounce) packages of soba noodles
 
- 5 garlic cloves, minced
 
- 1 Tbs grated ginger
 
- 1 Tbs sesame oil
 
- 1/3 cup soy sauce
 
- ¼ tsp chili paste (or to taste)
 
- 3-4 stalks of yu choy (or broccolini or bok choy), chopped
 
- 1 stalk green onion, sliced
 
- Sesame seeds, for garnish
 
Instructions:
- Cook soba noodles according to package instructions (usually boil for 7-8 minutes)
 
- In a bowl, mix the garlic, ginger, sesame oil, soy sauce, and chili paste together
 
- In a pan, add yu choy (or vegetable of choice) first, then add cooked noodles with sauce and green onions. Cook for a minute while mixing the ingredients
 
- Top noodles with sesame seeds and serve
